Like I mentioned in the post about breakfast, we opted to go for meals that did not require ice or refrigeration for a week long trip. Additionally, we tried to consider that we might be super tired at the end of each day and therefore meals needed to be simple. To do this, we stuck with simple one pot meals.

What a beautiful lunch spot this would have been! It's part of the Robson Shadows Campground that we stayed at for our jumping off point into Jasper National Park.
Lunches for our camping trip needed to be packable or easy to make on the road as our days were either spent on long drives or long hikes. They also had to keep reasonably well, since we would often make them at the same time as breakfast to pack away for lunch.
While we could have gone the cooler and ice route for to keep some of our food chilled. We decided to go for the uncooled route. That left us without the breakfast luxuries of eggs, bacon, and chilled non-dairy milks for cereal. We also chose to opt away from more difficult breakfasts like pancakes, which we could have made without eggs by using a flaxseed paste.
